Our family loves enchiladas! Typically, I would make beef enchiladas for the family until one day, one of the littles requested that I make half just cheese, please! After that, I learned that I need a whole casserole dish of cheesy enchiladas because they quickly disappeared. As a busy mom, I love how quick and effortless these are. Your children can whip this dish up for mom on any night of the week!
Quick Easy Cheesy Enchiladas That Are Awesome
Ingredients

- 1 can of red enchiladas sauce
- 8 corn tortillas or flour tortillas
- 16 oz. block of Monterey Jack Cheese or any favorite cheese of choice
Tools
- grater
- 9×13 baking dish
- cutting board
Instructions For Making – Quick Easy Cheesy Enchiladas That Are Awesome
Preheat the oven to 350 degrees.
Shred your Monterey Jack Cheese. We love to shred our own cheese, it just tastes better! But if you are running short on time, grab a bag already shredded and you are ready to go.

In your 9×13 baking dish, drizzle a small amount of enchilada sauce across the bottom.
If using corn tortillas, heat in the microwave for about 10 seconds to soften so they will fold easily and not tear.
Begin filling each corn tortillas with just enough cheese so that you can close your tortillas easily.

Place each filled tortillas seem down so the cheese stays nicely inside.

Once all eight are arranged, pour the remaining can of red enchilada sauce all over your enchiladas.
Top with the remaining Monterey Jack Cheese.

Bake for 30 minutes or until cheese is melted. Enjoy!

This night I had made both cheese and beef enchiladas to feed the family! All but one got gone by somebody, I think they were hungry! We served the enchiladas with a simple, but delicious salad along with a bowl of pinto beans. We topped our pintos with chopped onions and freshly shredded Monterey Jack Cheese. It hit the spot.

Can canned pinto beans be good? Oh yes! I take 3 cans of pinto beans, any brand will do, and cook them with a little drizzle of olive oil and some Better Than Bouillon beef flavored base to your tasting. You will really enjoy these! Sometimes, we just need a quick and easy side.
