This easy vegetable soup using leftover roast in the crock pot is perfect for a cold evening meal! This recipe is so simple you really don’t need to even measure. My mom made me some vegetable soup the other day and it was so, so good! My daughter loved it! She came over and showed me how she did it and I added a little bit of leftover roast for the perfect soup for a cold winter day!

My son loves a pot roast! It is a top 10 for him. I usually make a roast in the crock pot with rice for him and hope for good behavior the rest of the week, right?? I had a little bit of the pot roast left and decided to make some vegetable soup and put that roast in with it. Can I say, oh yes!! So delicious!

This easy, throw together vegetable soup is perfect for the crockpot. That is why frozen vegetables work best in this recipe. Otherwise, canned vegetables if cooked too long can get too mushy.

I made BLT’s and they were so tasty! We had some bacon handy so I baked it in the oven and it was so crisp! If you have not tried baking your bacon, try it, it is so easy!

Other options, of course the traditional grilled cheese sandwich is always a win at our house. It doesn’t matter what you make the grilled cheese with, it gets gone! Another classic is cornbread all buttery and delicious!

Ingredients

  • V8 Original Vegetable Juice
  • Frozen Mixed Vegetables (1 lb)
  • Canned Tomatoes (1 can)
  • Elbow Noodles (1 cup)
  • 1 Onion (diced)
  • 1 Green Pepper (diced)
  • Garlic (tablespoon)
  • Leftover Roast
  • Salt & Pepper (to taste)
  • Sugar (to taste)
  • Olive Oil or Butter

How To Make It- Easy Vegetable Soup Using Leftover Roast In The Crock Pot

Start with your skillet and add olive oil or butter to sauté your onions and peppers. My mom, prefers to use butter. Then, after they have cooked for a few minutes, add you garlic and let that cook all together until soft. Since these are going into the crockpot, you don’t have to cook for a very long time.

To your crockpot, add 32 ounces of V8 Original Vegetable Juice. I had a 64 Oz bottle and I used 1/2. Add your frozen vegetables, canned tomatoes, elbow noodles, cooked onion, green pepper and garlic and leftover roast. Stir all together.

My mom believes in adding a little sugar to take the bitterness out. I added about 1/4 cup, but just start small and then you can always add a bit more later after it has had time to cook. Salt and Pepper to taste. As a bonus, I added some Killer Hogs A.P. Seasoning that we have really been enjoying. This is optional, but just a good overall basic seasoning mixture!

This soup is so easy, you can’t mess it up, I promise! If you like more noodles, add another cup, if you like more tomatoes, add another can, if you like a little heat, add some rotel. The sky is the limit on this soup! I will say, the noodles are one of my favorites!

Use any leftover vegetables that you have on hand! Just wait until the last hour or so before you throw those in so they don’t get too mushy.

Letting this soup cook on low for 8 hours is the preferred method so all the flavors can come together! You can always hit the high button if you need to! Since everything is cooked, you are just waiting on the vegetables and noodles. Enjoy!
