How to make the best egg bites? These broccoli, cheese and onion egg bites are so moist and so delicious! They are the perfect healthy breakfast or just anytime grab and go treat!

This combination of the broccoli, cheese and onion was a pleasant surprise!

We were at home from church the morning I made these. My husband was sick with a cold. I thought, I will try making those egg bites I have been wanting to make. I was shocked that my husband and son loved these!

They went back for seconds! Happy they were a hit! A second batch is in the making!

Ingredients- How to Make the Best Egg Bites

  • 12 eggs
  • 1 bag of Steamed Broccoli Florets
  • 1/2 cup + a bit more of your favorite cheese (Tillamook is really good)
    • See explanation below
  • 1/2 large onion (diced)
  • Nonstick Cooking Spray
  • Salt and Pepper

Tools

  • Muffin Pan (Silicone works great)
  • Cutting Board
  • Knife
  • Measuring Cup
  • Liquid Measuring Cup or Bowl

Instructions- How to Make the Best Egg Bites

  1. Start by spraying your muffin pan with nonstick cooking spray. Set to the side.
  2. Next, steam your broccoli florets as directed on the bag. Let them cool. Then, cut off the broccoli stems and chop the broccoli. Season with salt and pepper, taste. Set to the side.
  3. Then, dice 1/2 onion, set to the side.
  4. Next, take your liquid measuring cup or bowl, break all 12 eggs and whisk until blended well.
  5. Then, begin filling the muffin pan with broccoli, then onions, then the egg mixture.
    • only fill about 3/4 full.
  6. Lastly, place the cheese on top.
  7. Bake at 350 degrees for 20-25 minutes or until the top is firm.
    • Don’t over bake.

Tips

Overbaked egg bites don’t taste a bit good. For the best egg bites you must know when to take them out. If the middle is firm and doesn’t jiggle, they are done. Everyone’s oven bakes differently, so keep an eye on them!

I have made egg bites in the past and they were fine, but this mixture really hit the spot!

Weight Watchers- How to Make the Best Egg Bites

On Weight Watchers, these are only 1 point per egg bite. Yay! The cheese is the only thing you have to count. So, add as much cheese as you like! However, remember to increase your points if counting.

The Tillamook cheese is really good and thick. I laid it on the top to try and avoid burning on the top of the egg bite and it worked well!

For 1/2 cup cheese it is 10 points. I evenly distributed the 1/2 cup of cheese over 10 muffins, making each muffin one point. That would leave 2 muffins left. I didn’t measure, but used the approximate amount of cheese used on the other individual muffins. Just eyeball it!

So, you need 1/2 cup and a bit more for your cheese!

Meal Prep

My friend, these are great for meal prepping for the whole week! Eat these egg bites for breakfast, lunch, dinner or just a little snack.

Reheat- How to Make the Best Egg Bites

Finally, if you have any left simply heat the egg bites in the microwave! Heat for 40-45 seconds. Again, don’t over heat them and ENJOY!
